[曼谷] 藍象學院做泰國菜(2)

BLUE ELEPHANT COOKING SCHOOL & RESTAURANT 

Nam Jbnfor Plaa Phaow Samoon Prai (Chilli Sauce for Grilled or Baked Fish with Herbs in Banana Leaf) 

Ingredients 
Paste 
1 root         coriander root 
4 cloves     garlic 
5 pieces     small bird's eye chillies 
1 inche       big red chilli

Seasoning 
1 tablespoon      fish sauce 
1/2 tablespoon   palm sugar 
1 tablespoon      tamarind juice 
1 teaspoon         lime juice 

Method 
1. In a mortar: pound garlic, coriander root, small chilies and red chili In the mortar until turn into the paste. Set aside. 
2. In saucepan on a low heat: add sugar, fish sauce and tamarind juice. Simmer approximately 1 minute. 
3. Transfer to mixing bowl then add lime juice and the paste, mixed well. 

Serve in a small sauce bowl accompanied with Plaa Phaow Samoon Prai (the Grilled or Baked Fish with herbs in Banana Leaf).
